1. Tacos al Pastor

2. Mole Poblano

The pinnacle of culinary complexity. This thick, dark sauce is a masterpiece involving over 20 ingredients, including various dried chilies, nuts, seeds, spices, and—the secret weapon—dark chocolate. Usually served over turkey or chicken, it is the flavor of Mexico’s most grand celebrations.

3. Cochinita Pibil (Yucatán)

7. Tlayudas (Oaxaca)

Often nicknamed "Mexican pizza," but with much more character. It’s a large, toasted corn tortilla spread with asiento (pork lard), black bean paste, Oaxacan string cheese, and topped with tasajo (dried beef) and avocado.
